'As his predecessors before him, Jean-Marc has a respect for the soil, the plant and the fruit and the respect of tradition. The work in the vineyards is mostly done by hand and remains in tune with the environment. There is no use of pesticides or potash fertilizer which is to say the Domaine thrives to have healthy vines growing in a balanced soil.To increase the concentration and therefore the quality of the wines the root stocks have been chosen for their low yield. The vines are on average 40 years old. As their roots grow deep into the subsoil underneath they carry back to the fruits all the richness of complexity of the limestone rocks and marlstones that have been there since 185 millions when Burgundy sunk below the sea level! All these elements play an important role in the concentration of the must and therefore the complexity of our wines.
Jean–Marc does not want to change the intrinsic qualities of the vines, he just wants to guide them into their best expression! Each vine from a particular appellation grows in a very specific soil or “terroir” and each wine reflects that diversity and specificity.'
